PUMPKIN SPICE WAFFLES

These semi-from-scratch Pumpkin Spice Waffles take
just minutes to put together, leaving you time to do what matters most during
the holidays—spend time with your family!

 

Yields 8 Belgian Waffles

Prep Time: 5 min

Cook Time: 10 min

Total Time: 15 min

 

Ingredients:

·        
1 2/3 cup pancake mix

·        
2 t cinnamon

·        
1 cup non dairy milk

·        
1 teaspoon apple cider vinegar

·        
1/3 cup pumpkin puree (if it’s not in season go
ahead and give banana or applesauce a try!)

·        
3 T aquafaba (the liquid drained from a can of
beans)

·        
2 Tablespoons coconut oil (or other neutral oil)

 

Instructions:

1.      
Preheat your waffle maker.

2.     
Pour the waffle mix into a bowl. Add the
cinnamon and stir together.

3.     
In a large measuring cup, measure out the non
dairy milk, vinegar, pumpkin, aquafaba, and oil. Whisk together.

4.     
Pour the liquids into the dry ingredients and
mix to incorporate completely.

5.     
Spoon the batter into a preheated waffle maker.
I was able to make 8 belgian waffle squares.

6.     
Cook according to waffle maker instructions.

7.     
Remove from waffle maker and enjoy! Serve these
with Pumpkin Spice Syrup

 

PUMPKIN SPICE SYRUP

Tis the season for all things pumpkin! Add a
drizzle of Pumpkin Spice Syrup to whatever your heart desires—coffee, ice
cream, a spoon, your finger—you get the idea!

Yields 2 cups of syrup

Prep Time: 2 min

Cook Time: 5 min

Total Time: 7 min

 

Ingredients:

·        
1/2 cup canned pumpkin puree

·        
1/2 – 3/4 cup maple syrup

·        
1 cup lite coconut milk

·        
1/2 teaspoon cinnamon

·        
1/8 teaspoon ground ginger

·        
1/8 teaspoon ground nutmeg

·        
1/8 teaspoon ground cloves

·        
1 teaspoon vanilla

 

Instructions:

1.      
Place all ingredients in a small saucepan over
medium low heat.

2.     
Whisk to combine.

3.     
Allow the mixture to come to a slight boil,
whisking often.

4.     
Once mixture has boiled and is well mixed remove
from heat.

5.     
Allow to cool and pour into a storage container.

6.     
Drizzle on everything and enjoy!

7.     
Store leftovers in the fridge.
