Red Lentil Hummus. What a great idea, right? I
love lentils and hummus, but I never thought to make hummus with lentils.
Super easy hummus made with red lentils!
Yields: 3 cups
Prep Time: 5 min
Cook Time: 15 min
Total Time: 20 min
1 cup dried red lentils
2 cups water
1-2 garlic cloves
3 1/2 – 4 T tahini
1 tsp sea salt
1 tsp ground coriander
1/2 – 1 tsp lemon zest
1/4 tsp paprika
2 T red wine vinegar
1 T lemon juice
In a saucepan , add the lentils and
water. Bring to a boil, then turn down and simmer until all the liquid is
Remove from heat and let cool.
In a food processor , add the lentils
and the remaining ingredients and blend until smooth.
This mixture is thinner than traditional hummus,
but it does firm up nicely once placed in the fridge.
This should last at least a few weeks in the fridge. It also
freezes well. Enjoy!
