Toast with Refried Beans and Avocado

Ingredients:

·        
2 slices
sandwich bread (see note)

·        
1
cup homemade or store-bought vegan refried beans

·        
1
avocado, thinly sliced

·        
A few
slivers white onion

·        
Coarse
sea salt such as Maldon or fleur de sel

 

Directions:

 

Toast bread to desired
level of doneness. Top with refried beans and avocado (mash with a fork if
desired). Add slivered onions, sprinkle with salt, and serve.
